Joburg has been hit by a heatwave, and what better way to cool down than with a frozen coffee?
Serves 6 – 8
Ingredients 2 cups (500 ml) strong black coffee or espresso, freshly brewed ½ cup Huletts brown sugar 1 tsp Vanilla extract Fresh whipping cream, cold Huletts castor sugar Instant coffee for garnish
Method Dissolve the sugar in the coffee, stirring well. Add the Vanilla extract. Pour into a large flat bowl and place in the freezer. Check on it every hour or so, and once ice crystals start to form use a fork to break them up by stirring it gently. Continue this process until it is completely frozen. Once the granita is ready, whip the cream and sweeten to taste with castor sugar. Scoop the coffee ice crystals into serving glasses, top with a dollop of whipped cream, sprinkle over some instant coffee and serve immediately.
